Recipes that aren’t finished. These are untested — written, the ratios checked on paper, but not yet baked and tasted, so they’re kept out of the main recipe list. Numbers, illustrations, and a place in the index come once they’re proven. Read them, bake them, tell me what to fix.
Canelés
- Thai Tea Canelé — clean, alcohol-free, a strong steep of ChaTraMue mix. The baseline Thai tea.
- Thai Tea Canelé (Evaporated-Forward) — the same, but evaporated milk pushed to ~36% of the dairy for a creamier, cooked-milk body.
- Spiced Thai Tea Canelé — rum restored plus a chai-style warm spice. A cool-weather version.
- Taro Mochi Canelé — a chewy mochi base under a taro custard layer; the taro-mochi answer to the Chocolate Mochi Canelé.
Drinks
- Thai Iced Tea — cha yen from the mix, sweetened lightly (condensed + evaporated milk, no added sugar), well below the café default.

- The three Thai tea canelés are meant to be A/B’d as a small batch — bake them side by side, keep the one you like, retire the others.
