What sweetened condensed milk actually is, how it behaves differently from evaporated milk, whether you can fake it from evaporated milk + sugar, and how to bake with it without turning a custard into candy.

What it is

Sweetened condensed milk (SCM) is whole milk with about 60% of its water boiled off — the same concentration step as evaporated milk — but with a large amount of sugar dissolved in instead of being sterilized. It ends up ~55% sugar by weight: thick, sticky, intensely sweet, with a faint dulce-de-leche note from the cooked lactose. The sugar is also what preserves it (no sterilization needed once the can is that sweet).

The single most useful way to think about it: SCM is not milk. It’s milk solids dissolved in syrup. Treat it as a sweetener that happens to carry some dairy, not as a dairy that happens to be sweet.

Evaporated and condensed milk are the same concentrate. The only real difference is that one bucket of sugar: evaporated has ~10g, condensed has ~55g. That one number changes everything about how you use it.

Can you just use evaporated milk + sugar instead?

Yes — that’s essentially what condensed milk is, and the DIY version works well. Gently heat 1 cup (240g) evaporated milk with about 1 to 1¼ cups (200–250g) sugar, stirring until the sugar fully dissolves, and you get something that stands in for a 14oz can of condensed milk in almost any recipe.

Two honest caveats:

  • It’s slightly thinner and less caramelized. Real SCM is cooked down a touch further, so it’s more viscous and a hair more dulce-flavored. For most baking — where you’re dispersing it into a batter or filling anyway — the difference is invisible. For something where the texture of the SCM itself matters (a no-cook fudge, a key lime pie set by the condensed milk’s body), the real can is safer.
  • The reverse fails. You cannot turn condensed milk into evaporated milk by leaving the sugar out — there’s no way to remove the ~55% sugar that’s already dissolved in. Evap → condensed is easy; condensed → evap is impossible.

So if you keep evaporated milk and sugar on hand, you don’t strictly need to stock condensed milk too. (For the cooked-milk flavor without the sweetness, reach for plain evaporated milk.)

What it does in baking

  • Sweetness + body + dulce flavor, all at once. It’s the workhorse of Thai iced tea, Vietnamese coffee, key lime pie, magic cookie bars, and countless fudges — anywhere you want creamy sweetness with a caramel edge.
  • It browns fast. Lots of sugar plus milk solids means aggressive Maillard browning and caramelization. Good for color; a liability on a long bake (watch for scorching).
  • It tenderizes and softens the set. Sugar is hygroscopic and interferes with both starch gelatinization and egg/protein setting. So a batter heavy with SCM bakes softer, wetter, and later — wonderful for a gooey center, dangerous if you need a clean set.

How to bake with it without wrecking a recipe

The trap is treating SCM as a dairy and just pouring it in — you instantly overshoot the sugar and end up with a soft, wet, over-browned result. The fix is one rule:

For every gram of condensed milk you add, remove about 0.55g of granulated sugar from the recipe — because that gram of SCM already brought ~0.55g of sugar with it. Also account for water: SCM is only ~27% water (vs ~88% for milk), so it dries a batter — add a splash of water or milk back if it reads thick.

Worked example: adding 80g condensed milk introduces ~44g sugar, ~22g water, and ~14g milk solids. So you’d cut the recipe’s granulated sugar by ~44g and barely touch the liquid. Skip this subtraction and the dessert turns into candy with a burnt crust.

The same logic, decomposed: 1g SCM ≈ 0.55g sugar + 0.27g water + 0.16g milk solids. Once you see it that way, swapping it in is just bookkeeping.

Where it shines

  • Thai iced tea and Vietnamese (cà phê sữa đá) coffee — the defining sweet-creamy element.
  • No-bake and set-by-acid desserts: key lime pie, lemon icebox pie (the acid thickens it).
  • Fudge, caramels, dulce de leche (literally just SCM cooked down).
  • A finishing drizzle on milk-tea or coffee bakes, where you want the sweet caramel note on top rather than baked in.
