Evaporated Milk
What evaporated milk actually is, how it differs from regular milk and cream, what it does in baking, and how to substitute it without wrecking a recipe’s ratios.
What it is
Evaporated milk is fresh milk with about 60% of its water boiled off, then sterilized and canned. Removing that water concentrates everything left behind — fat, protein, and lactose — and the heat of the process lightly caramelizes the lactose, which is where its signature golden color and faintly cooked, nutty flavor come from. It’s shelf-stable and unsweetened (that’s the difference from condensed milk, below).
How it compares
Per 100g, roughly:

Two things fall out of this table:
- Evaporated milk is concentrated milk, not a cream. It’s roughly twice the strength of whole milk on fat, protein, and sugar — but it has nowhere near cream’s fat (8% vs 36%). So it is not a fat-for-fat swap for cream; it’s closer to “double-strength milk.”
- Evaporated ≠ condensed. Sweetened condensed milk is also concentrated, but with a huge amount of added sugar (~55%). They are not interchangeable.
What it does in baking
- Caramel/cooked-milk flavor. The lightly caramelized lactose gives a gentle butterscotch-nutty note you don’t get from fresh milk. This is the whole reason to reach for it on purpose — it’s the defining flavor of Hong Kong milk tea, Thai iced tea, tres leches, and many fudges and pies.
- Browning. More milk solids and sugar at the surface means faster, deeper Maillard browning.
- Richness without heaviness. It adds creamy body and milk-solid mouthfeel without cream’s fat load — useful when you want a fuller dairy taste but a lighter fat percentage.
- A structure caveat. Because it’s concentrated, swapping it 1:1 for regular milk pushes fat and sugar up and water down enough to interfere with structure in delicate baked goods. America’s Test Kitchen calls it “a poor substitute for regular milk” for exactly this reason. Use it deliberately, not as a casual milk stand-in.
“Isn’t a custard already cooked milk? Why cook it twice?”
A fair question, and the answer is that “cooked milk” means two completely different things here — two different cooks doing two different jobs:
- Your custard’s cook is about structure. Scalding milk to ~175°F and setting it in the oven coagulates egg proteins and gelatinizes starch — it turns liquid into a set custard. It’s gentle and short, and it does almost nothing to the milk’s own flavor (no real browning, barely any caramelization).
- Evaporated milk’s cook is about flavor and body. It’s boiled down ~2× and then sterilized in the can at ~240–260°F for 15+ minutes — a hard, hot, long cook that caramelizes the lactose and drives Maillard browning. That’s where the tan color and the deep cooked/caramel “canned-milk” note come from.
So you’re not doing the same thing twice. You’re importing a flavor your custard cook fundamentally cannot make — you’d scorch fresh milk in your kitchen long before you matched a factory retort. This double cook is the backbone of an entire dessert family: flan / crème caramel, Filipino leche flan, Vietnamese bánh flan, tres leches all get their dense, caramel-milk character exactly this way. There’s a texture bonus too — evaporated milk’s already-denatured proteins and concentrated solids tend to give a firmer, silkier, cleaner-slicing set.
The instinct is worth acting on, though, as a flavor test: if you want that cooked-milk/caramel character (milk teas, Thai tea, flan), the double cook is the whole point; if you just want a clean, fresh dairy custard, evaporated milk only adds an off “tinny” note — use fresh milk and cream instead. And more isn’t better: past a point the cooked flavor reads as canned rather than rich, which is why it’s used as a fraction of the dairy, not all of it.
How to substitute without changing ratios
The fix is reconstitution — add the water back:
- To use evaporated milk in place of regular milk, ratio-neutrally: mix it with roughly an equal volume of water to re-thin it to about whole-milk strength. Now it slots into a recipe without shifting fat/sugar/structure.
- The catch: diluting it back also dilutes the caramelized flavor you were after. You keep a faint cooked note, but most of the punch is gone — so you’ve effectively spent effort to land back at regular milk.
This is the core tension. You can have the flavor (use it undiluted, accept shifted ratios) or ratio-neutrality (reconstitute with water, lose most of the flavor) — but not both from a full swap. The practical middle ground is to add a modest amount of undiluted evaporated milk alongside the regular milk/cream: you get most of the flavor while the ratios barely move. That’s the approach used in the Hong Kong Milk Tea Canelé — the cream stays for fat, a small pour of evaporated milk adds the cooked-milk character, and the analysis lands within half a point of the base.
Other practical swaps:
- No evaporated milk? Simmer regular milk down by ~60% (gently, so it doesn’t scorch) for a homemade version — you even get more of the caramelized flavor.
- For cream’s richness with evaporated’s flavor, keep the cream and add a little evaporated milk, or add a few grams of butter to make up the fat evaporated milk lacks.
Where it shines
Reach for evaporated milk when the cooked-milk flavor is a feature, not a bug:
- Milk teas — Hong Kong (港式奶茶) and Thai iced tea both rely on it.
- Custards and flans, pumpkin pie, tres leches.
- Fudge and caramels (the pre-caramelized lactose helps).
- Mac and cheese and creamy soups (holds up under heat without curdling as readily as cream).
