What these bags are

Three surfaces solve the same problem differently. Glassine is paper calendered (pressure-rolled) until it’s smooth and semi-translucent — naturally grease- and moisture-resistant with no coating, the signature bakery-counter look. Grease-resistant kraft is natural-brown or white paper treated (Quilon/silicone-type) to hold a grease barrier while staying matte and porous. Waxed is true wax-coated paper — the strongest grease barrier and a classic look, but the slickest surface of all. The functional point for canelés is the same across all three: paper breathes, so the lacquered shell stays crisp, where a sealed plastic bag steams it soft within hours. This is the same rule from the box guide — eat the same day, gift fresh, and say so — a breathable bag buys you the same few hours a window box does, no more.

The bolded kraft 4×6” is the all-rounder: cheap, breathes, and the only common surface that takes a rubber stamp cleanly. Glassine wins on looks and price-per-bag at carton volume but loses on stamping (see flags).

Per-bag economics

Cheapest viable per-bag is ~$0.03 — Uline glassine or Epakh kraft at carton/500-count volume. At realistic small-shop pack sizes (100ct), figure ~$0.08–0.13 for a flat bag. A stamped bag costs essentially the same: pigment-pad ink amortizes to roughly $0 per impression (one craft pad does thousands), so a stamped kraft 4×6” lands at ~$0.10–0.13 all-in — call it a dime. That’s well under the box options in Packing Canelés: a single kraft window box runs more in materials and footprint, where a bag is one cheap sheet of paper. Against the product itself it’s noise — a canelé costs well under a dollar to make and sells for several. A $0.03–$0.10 bag is under 3% of a $4 price. Packaging is not where the money is; pick for fit and look, not to save pennies.

Recommendation

  • Pop-up / market stall (cheap, stamp a logo): natural kraft grease-resistant 4×6”. It breathes, takes a 2-color stamp beautifully, and reads as intentional craft. Stamp the bag face directly. For a pair, step up to a 5.7×6.5” kraft (fits two side-by-side) or a small gusseted bag so they stand and don’t squash.
  • Gift (window / nicer): a self-sealing kraft window bag (shows the dark shell) or flat glassine for the translucent patisserie look. Fold the top — do not seal the adhesive strip airtight, or the shell softens. Put the branding on a kraft band, hangtag, or sticker rather than the slick face.
  • Sizing: 3×5” or 4×6” holds one. For two, use 5×7”-ish (5.7×6.5”) flat or a gusseted bag — two in a 4×6” is a tight squeeze that risks marring the ridges.

Honest flags

  • Confidence: High on the glassine breathe/grease behavior, the Uline FDA/USDA lines, and the stamp ranking (kraft > white > glassine > wax). Medium on several Amazon per-bag prices and pack counts — listings and packs change, so verify dimensions and price before ordering. Treat product names as starting points, not endorsements.
  • Glassine smears ink — the main gotcha. The calendered surface is non-absorbent; standard water/dye stamp-pad ink beads, smears, and rubs off. If you must stamp glassine, use a pigment or solvent (StazOn-type) pad and heat-set, or accept smudging — easier to stamp a separate kraft band or sticker. Waxed paper is worse: wax repels water-based ink entirely and can crack/flake.
  • Food-contact: use a food-safe pigment pad, stamp the outside only, keep ink off where it touches the pastry, and let stamped bags cure ~24h before use. Test-stamp each lot — coatings vary between manufacturers.
  • Never seal airtight. Self-seal window bags and heat-sealable kraft will steam the shell soft if fully closed — fold the top instead.

Stand-up & flat-bottom bags

Everything above lies flat. Two folds make a bag stand on a stall table — and a canelé is squat and heavy for its size (~55–60mm base, ~50mm tall, dense custardy crumb), so that weight is what decides which fold actually holds. Flat-bottom / SOS (block-bottom): the base glues open into a rectangular footprint and the walls become a box-like prism. This is the real stander — the glued base plus side gussets give it a footing, and the canelé’s low weight keeps it planted. Roll-top triangle: a plain flat bag (a French-fry / glassine-style sleeve) you fill, then roll the top down so the mouth pinches into a triangular prism. It leans more than it stands, but it’s the cheapest fold and reads artisanal. Each beats a flat sleeve when you need a bag to stand on its own, hold a pair upright without squashing, or carry more gift presence. Same rules carry over: matte kraft takes a stamp, glassine doesn’t, and never seal it airtight — fold loosely so the shell stays crisp.

One sizing rule for the stand-up family: read the base/gusset dimension (the middle number), not the flat width. You need ~2.5”+ of base for one canelé to sit flat, ~3” for a comfortable single, and ~3.25”+ to seat two side-by-side.

Closures

Three closures, matched to the shapes. Fold-down top + sticker is the default for the SOS popcorn and cookie bags: fold the top 2–3 times, seal with a round kraft sticker. It holds the box shape, gives a clean branded face, costs the least, and isn’t airtight, so the shell breathes. Tin-tie (built into the bakery and coffee bags) is a fold-over metal strip that reseals without a sticker, reads “bakery,” and reopens cleanly; fold it loosely and it breathes fine. Rolled / crimped top is the triangle fold itself — very breathable (the fold’s open ends pass air), looks handmade, but doesn’t seal and barely free-stands. All three beat a heat-seal or zip pouch, which traps steam and weeps butter. The sweet spot for a buttery canelé held a few hours: grease-resistant (EcoCraft) but un-poly-lined kraft, folded loosely — best grease barrier that still breathes. Plain kraft breathes best but resists grease least; poly-lined resists grease best but breathes least.

Grease is the deciding factor at small scale: plain uncoated kraft spots through if the canelé is even slightly warm. Pick a glassine-lined or poly-lined bag, or insert a glassine/parchment liner. A sensible first order: one 100-ct glassine-lined roll-top + one 50-ct flat-bottom window bag, then test-fit a real canelé and check for grease bleed before committing.

More honest flags

  • Confidence: High on shape behavior (flat-bottom stands, roll-top leans), the base-dimension sizing rule, and the WebstaurantStore specs/per-bag math at the listed pack counts. Medium on the exact two-canelé fit — “side-by-side” assumes the 55–60mm base; verify with one bag before committing to a case.
  • Grease vs. breathe is the real trade-off. Plain-kraft popcorn bags are only moderately greaseproof — fine for a short hold, may spot over hours. For anything sitting out, use the EcoCraft (grease-resistant, un-lined) options, top loosely folded.
  • The poly-lined coffee bag breathes worst — strongest grease barrier but traps moisture; leave it open or loosely folded for a crisp shell.

Boxes & the elevated tier

Bags are for grab-and-go: cheap, flat-packing, stamped, done. Boxes and elevated packaging are for the other jobs — gifts, holidays, and the “drop” photo where presentation is the product. The honest tradeoff: every step up costs more per unit, takes more storage volume flat or assembled, and adds packing time. None of that means a bag is “basic and sad” — and if it reads that way, the fix is cheap (a sticker or belly-band, below), not a custom box order.

Custom-printed boxes — the honest reality

True custom boxes are real, but premature for a pop-up. The economics:

The color catch: low-MOQ vendors print digital CMYK, not spot ink — and the brand’s fluoro-pink (#ff48b0) is exactly the near-neon CMYK can’t hit, so it prints duller. Faithful two-ink reproduction needs spot/Pantone offset, which means 500–1,000+ MOQ and plate fees.

Verdict: defer. Custom boxes are a phase-2 move (café / steady wholesale). When volume is predictable and a box size has settled, test one workhorse SKU (likely the 4-count) on Packlane or Arka first; reserve spot/Pantone offset for 500–1,000+ runs.

Buy a nice stock box, brand it with a custom riso sticker, belly-band, or stamp. This is the sweet spot, and it’s the workflow already started.
