How to box canelés for gifting, from a single one up to a full batch. A canelé is a fragile, fluted, top-heavy little thing with a caramelized shell that’s the whole point — so packing is really about three goals: keep the shells from touching, keep them from tipping, and let them breathe so they stay crisp.

The base measurement

This assumes a standard 55mm canelé mold, which gives a baked canelé about 55mm across the top and ~50mm tall. In a greaseproof liner, call the effective footprint ~60mm. One inch is 25.4mm, so:

  • 55mm ≈ 2.17”
  • 60mm (with liner) ≈ 2.36”

Everything below works from that. If you have smaller (45mm) or larger (60mm+) molds, scale accordingly.

The three rules

  1. Shells must not touch. Contact mars the ridges and traps moisture between pieces, softening the caramel. Dividers or liners keep them apart.
  2. They must not tip or slide. Canelés are top-heavy. A box sized loosely lets them roll and knock; size snug, or use compartments.
  3. They must breathe. A fully airtight box steams the shell soft within hours. Pack fully cooled and leave the lid slightly ajar until then; a window box or light closure is ideal.

And a corollary: eat the same day. No packaging keeps the shell crisp past several hours, so gift them fresh and say so.

Why you can’t just cram them tighter

It’s tempting to think the flutes could mesh gear-like — ridges of one nesting into the valleys of the next — to pack tighter than their 55mm width. In theory you’d save a few millimeters. In practice the flutes are shallow, the canelé tapers (so flutes only align at one height), and meshing means pressing the shells together, which mars exactly the surface you’re protecting. The gain is small and fragile; size up instead.

Recommendations

  • Pairs (1–2): a 4×4×2.5” kraft window box, canelés on the diagonal, each in a greaseproof liner.
  • Four: a 6×6” kraft box with a 4-compartment divider insert. Each cell holds one upright with no contact — the cleanest small-gift solution. (A bare 5×5” also works but they can shift.)
  • Six to twelve: a divided cupcake/muffin box — the 12-slot 10×7×4” box is ideal for a dozen and the cavities do all the work.
  • Full batch (20–24): a large flat bakery box, single layer if you can, or split into two gift boxes (which is friendlier to give away anyway). Avoid stacking layers without a rigid board between them — the bottom shells crush.
