  1. Fill a Collins glass with ice.

  2. Add Suze. Top with tonic water.

  3. Stir gently.

A bitter aperitif, very low in alcohol — ~3% finished. Suze is a gentian liqueur: low-proof and intensely bitter, so a small pour flavours the whole glass. The bitterness (not the ~3% ABV) is what makes it appetite-whetting; the tonic contributes most of the ~6% sugar and all the fizz.
