Ingredients

   
100g Kobe beef (or any thick-cut meat)
  Rape blossoms (or seasonal greens)
  Macadamia nut oil, as needed
  Pinch of salt

Dark Brown Miso Marinade

   
50g dark brown miso
25g caster sugar (or brown/granulated)
30g pure sake
30g real mirin
25g red wine
4g grated garlic
15g soy sauce

Steps

  1. Combine all miso marinade ingredients and mix until smooth.

  2. Coat beef generously with marinade. Let marinate (time not specified in source — at least 30 minutes recommended).

  3. Heat macadamia nut oil in a pan. Sear beef on high heat, being careful not to burn the miso.

  4. Blanch or sauté rape blossoms with a pinch of salt.

  5. Slice beef and serve with greens.
