011 Miso Steak
Ingredients
| 100g | Kobe beef (or any thick-cut meat) |
| Rape blossoms (or seasonal greens) | |
| Macadamia nut oil, as needed | |
| Pinch of salt |
Dark Brown Miso Marinade
| 50g | dark brown miso |
| 25g | caster sugar (or brown/granulated) |
| 30g | pure sake |
| 30g | real mirin |
| 25g | red wine |
| 4g | grated garlic |
| 15g | soy sauce |
Steps

Combine all miso marinade ingredients and mix until smooth.

Coat beef generously with marinade. Let marinate (time not specified in source — at least 30 minutes recommended).
