Ingredients

   
200g chicken thighs
1 white spring onion
10 sweet green peppers
60g mirin
20g Japanese sake
30g dark soy sauce
40g light-brown miso
  Potato starch, as needed

Steps

  1. Combine mirin, sake, dark soy sauce, and miso to make the sauce.

  2. Cut chicken thighs into portions. Dust lightly with potato starch.

  3. Grill or pan-fry chicken until cooked through and nicely browned.

  4. Cut spring onion into sections and grill or char alongside sweet green peppers.

  5. Glaze chicken with miso sauce during the last minute of cooking.

  6. Serve chicken with grilled onion and peppers.

Notes

  • Potato starch helps the sauce adhere and gives a slight crispness.
