010 Miso Grilled Chicken
Ingredients
| 200g | chicken thighs |
| 1 | white spring onion |
| 10 | sweet green peppers |
| 60g | mirin |
| 20g | Japanese sake |
| 30g | dark soy sauce |
| 40g | light-brown miso |
| Potato starch, as needed |
Steps

Combine mirin, sake, dark soy sauce, and miso to make the sauce.

Cut chicken thighs into portions. Dust lightly with potato starch.

Grill or pan-fry chicken until cooked through and nicely browned.

Cut spring onion into sections and grill or char alongside sweet green peppers.

Glaze chicken with miso sauce during the last minute of cooking.
