Ingredients

   
4 slices soft white bread
4 slices thinly sliced ham
2 slices sharp cheddar or gruyère
1 tbsp salted butter, softened
1 tbsp Dijon or honey mustard

Steps

  1. Butter one side of each bread slice.

  2. Spread mustard on two of the slices (on top of the butter).

  3. Layer ham and cheese on the mustard slices.

  4. Close sandwiches. Cut off crusts. Cut into triangles or fingers.

Notes

  • Sharp cheddar is the most British choice. Gruyère or comté are nuttier and melt-ier if you want something fancier.
  • Honey mustard makes it slightly sweeter and more picnic-friendly. Dijon is sharper and more classic.
  • Butter both slices — it’s a moisture barrier and adds richness.
  • For a crowd, overlap ham slices so every bite has meat edge-to-edge.
  • Pairs well with the cucumber and watercress sandwiches for a full afternoon tea platter.
  • Travels well wrapped in cling film. Make up to 2 hours ahead.
