A very lean 1:53 — cold water extracts slowly, so it needs far more time, not more leaf. Over 8–12 hours the low temperature pulls sweetness and body while leaving most of the astringent tannins behind, giving a smooth, low-bitterness brew. Leaf retention is tiny against 800g of water, so nearly all of it reaches the glass.
