Ingredients

To bloom gelatin:

   
50g milk
5g gelatin

Everything else:

   
150g milk
150g heavy cream
50g sugar
3 bay leaves

Steps

  1. Bloom the gelatin in 50g milk.
  2. Heat remaining milk, heavy cream, sugar and bay leaves until steaming (about 160°F). Do not boil.
  3. Pass it through a sieve.
  4. Pour into ramekins.
  5. Let it set in the fridge for at least 4~5 hrs.
