004 Bay Leaf Panna Cotta
Ingredients
To bloom gelatin:
| 50g | milk |
| 5g | gelatin |
Everything else:
| 150g | milk |
| 150g | heavy cream |
| 50g | sugar |
| 3 | bay leaves |
Steps
- Bloom the gelatin in 50g milk.
- Heat remaining milk, heavy cream, sugar and bay leaves until steaming (about 160°F). Do not boil.
- Pass it through a sieve.
- Pour into ramekins.
- Let it set in the fridge for at least 4~5 hrs.
