Poaching Shrimp

Boiling shrimp overcooks them. Water that has just come off the boil holds enough heat to cook them through and nothing more, so the variable to control is not time on the flame — it is how long they sit in a covered pot with the heat off.
Why the Heat Goes Off
Shrimp are small, thin, and almost all muscle. In water at a rolling boil the outside races past done while the centre catches up, and the fibres contract hard enough to squeeze out moisture — which is what makes a boiled shrimp rubbery and curled into a tight O.
The target is an internal temperature, not a time. ThermoWorks pull shrimp at 140°F and hold the water between 155 and 170°F to get there. The FDA puts the food-safety floor for seafood at 145°F and describes done shrimp as firm, pearly, and opaque. America’s Test Kitchen’s cold-start method holds the water at 155–163°F depending on size. All three land in the same band, and none of them is a boil.
3800g of water off the boil is a large heat reservoir cooling slowly. Drop in 450g of cold shrimp and the pot settles into roughly that 155–170°F range, then drifts down. The shrimp cook through with the fibres relaxed.
Two things make this fail:
- Not enough water. Below about 2800g per 450g of shrimp the pot drops too far when they go in, and they stew in cooling water instead of poaching. More water is a bigger reservoir and a more forgiving one.
- The lid off. The trapped heat is doing the cooking. An uncovered pot sheds it into the room, and the times below are all wrong.
How Long, by Size and Shell
Rows are the count per pound — the number printed on the bag, which is the only honest measure of shrimp size. Columns are what is still attached. Minutes off heat, covered, for 450–700g of shrimp in 3800g of liquid.

Read across a row rather than down a column. The shell adds heating distance and a thin air gap between shell and muscle, and a head adds mass on top of that — which is why the third column runs longest and why small shrimp are rarely sold head-on.
At U-15 the clock stops being the right instrument. The one lab measurement of shell-on versus peeled prawns found the shell worth about one minute, and no published recipe gives an off-heat time for colossal at all — ThermoWorks reach for a thermometer at that size instead, and so should you. Pull at 140°F at the thickest part.
These are a starting point, not stopwatch measurements. The test is the shrimp: cut one open at the low end of its range and look. Opaque all the way through, and bent into a C rather than curled into a closed O. Underdone gets 60 more seconds with the lid back on, which costs nothing. Overdone cannot be undone.
Add about a minute if the shrimp went in straight from the fridge, or if they were frozen and thawed and still cold at the centre. Subtract about a minute if they sat out 20 minutes first.
Where These Times Come From

Two things worth knowing about that evidence. The times converge on 5 minutes for extra-large and jumbo, which is what the middle of this table reflects. And no authoritative count-per-pound timing chart exists — every one that turns up in a search is machine-generated. The column shape here is reasoned from the ATK anchors plus the one-minute shell penalty Li et al. measured, not copied from a source that had already done it.
Count Is the Only Real Size
Buy by the count, not the adjective. There is no industry standard for shrimp size names, and the vendors say so themselves — the American Shrimp Processors Association notes that “since these appellations are not universally defined and regulated, the numbers system works best,” and Fulton Fish Market states flatly that “there are no industry standards for shrimp sizing names.”
How far apart do they get? The word jumbo is applied to everything from 13–15 to 26–30 across major sellers — a factor of two in the weight of one shrimp. One vendor’s colossal is another’s extra large. The federal grade standards regulate that a declared count is truthful and never mention the words jumbo or colossal at all.
U-15 means under 15 to the pound, so one shrimp weighs at least 30g. Counts are normally quoted headless, shell on.
The Ice Bath Is Salted
Draining hot shrimp onto a plate leaves them cooking in their own heat for another minute or two, which is enough to lose what the gentle poach bought. They go into ice water, and the ice water gets salt in it.
Plain water is a hypotonic solution against seasoned shrimp: it pulls salt and soluble flavour out through the surface. A fistful of salt in the bath stops that gradient. Three minutes is enough to arrest the cooking; longer waterlogs them.
Then drain on a rack, and chill uncovered for an hour before dressing them. A dry surface takes sauce; a wet one dilutes it.
What the Shell Actually Does
It is usually said that the shell insulates the meat. That is the wrong mechanism, and worth correcting because it changes what you expect from it.
A shrimp’s cuticle is on the order of tens of microns thick sitting in front of a tail around 11mm through — a fraction of a percent of the meat behind it. No one has published a thermal conductivity for intact shrimp shell; a 2026 review calls that a genuine gap in the literature. A layer that thin cannot add much thermal resistance whatever it is made of.
What the one study that measured it found is that unpeeled prawns needed one more minute than peeled, and it credits two things: the shell adds distance for the heat to cross, and there is an air gap between shell and muscle where they separate. It also found less moisture lost. Harold McGee gives the same non-thermal reason in On Food and Cooking — the cuticle slows flavour compounds leaching out, and adds its own.
So the shell is worth keeping, but for moisture and flavour, and it buys about a minute of time rather than a wide margin of safety.
Shells Are the Second Ingredient
Shrimp shells carry most of the flavour that makes a shrimp taste like the sea — glutamates, glycine, and the carotenoids that turn the broth orange. Cooking shell-on gets some of that into the flesh, but the real return is the poaching liquid.
Strain it, simmer the peeled shells in it for 15 minutes, strain again, and chill. That is caldo de camarón, and it is the difference between a Mexican shrimp cocktail that tastes of shrimp and one that tastes of ketchup. Buying peeled shrimp to save ten minutes of work costs you the broth.
The liquid is worth building even when nothing needs the caldo: 3800g water, 45g kosher salt, a halved lemon, a bay leaf, 2g peppercorns, and a few parsley stems, boiled hard for 5 minutes before the shrimp go anywhere near it. Salt the water like pasta water — the shrimp season from the outside in and there is no second chance once they are cooked.
