The Field No. 8 Skillet
Notes on the one pan that gets used the most around here: the Field No. 8 cast iron skillet. What it is, why it’s good, how to season and care for it, and which recipes on this site are sized for it.
What it is
The Field No. 8 is a 10¼-inch (26cm) cast iron skillet with a cooking surface of about 8 inches across. Field Company casts it thinner and lighter than vintage-style modern cast iron (Lodge and the like), machines the cooking surface smooth, and finishes it with a light factory seasoning. The result is a pan that heats a touch faster, is easier to lift, and starts smoother than rougher sand-cast pans — closer to a vintage Griswold or Wagner in feel.
“No. 8” is the old foundry sizing number, not a measurement — it dates back to when pan sizes were keyed to wood-stove eye openings. A No. 8 lands at ~10¼ inches across the top.
Why cast iron for baking
- Heat retention. Cast iron holds a lot of thermal mass, so it stays hot when food (or cold batter) hits it. That steady heat is what crisps the edges of a clafoutis or sears a steak crust.
- Oven-to-table. It goes from stovetop to a 500°F oven to the table without a second thought. Most baked goods that want a crisp bottom benefit from a preheated or at least oven-stable vessel.
- Even surface heat. Once it’s up to temperature, the whole base radiates evenly — no hot spots dancing around like thin aluminum.
- The edges. For custard-batter desserts (clafoutis, far breton, Dutch baby), the buttered cast iron wall fries the batter where it climbs, giving a crisp, lacy edge you don’t get in glass or ceramic.
Seasoning and care
- Seasoning is just polymerized oil. Thin coats of fat baked past their smoke point bond to the iron and to each other, building a slick, rust-proof, mildly nonstick surface. It’s not a coating you buy — it’s a finish you grow.
- To maintain it: cook with some fat, and after washing, dry the pan fully and wipe a very thin film of neutral oil over the cooking surface while warm. Thin is the whole game — visible pooled oil bakes sticky and gummy.
- Washing. Warm water and a brush or non-scratch scrubber is fine. A little soap is fine on modern seasoning; it’s polymerized, not water-soluble. Dry immediately and completely — standing water is what rusts iron, not soap.
- Stuck-on bits: simmer a little water in the pan to loosen them, or scrub with coarse salt as a gentle abrasive. Avoid steel wool unless you’re stripping to re-season.
- Re-seasoning: if it looks dull, patchy, or food starts sticking, wipe on a paper-thin coat of oil and bake upside down at ~450–500°F for an hour, then cool in the oven. Repeat a few times to rebuild.
The acid problem
This is the one real gotcha for dessert bakers. Acidic ingredients — and cherries, citrus, tomatoes, wine all qualify — react with the iron and can strip a young or thin seasoning, leaving a metallic taste and a patchy pan. On a well-established, thickly seasoned pan a short bake is usually fine. But for a long, wet, acidic bake like a cherry clafoutis on newer seasoning, the safer move is:
- Use enameled cast iron (a Dutch oven lid-flipped, a Le Creuset skillet) if you have it, or
- Use a stoneware, ceramic, or glass dish for the most acidic, longest bakes, or
- Accept that you’ll likely re-season the Field after a cherry dessert — not the end of the world, just a wipe-and-bake.
If you do bake acidic fruit in the bare Field, get it out of the pan reasonably soon after baking rather than letting it sit and soak.
Cast iron vs a cake tin
You can bake any of these skillet desserts in a cake tin instead — it’s mostly a tradeoff of crust versus convenience.
Cast iron gives you: crisp, lacy edges and a browned bottom. A preheated, heat-retentive skillet fries the batter where it climbs the wall — that browned edge is much of the appeal of a clafoutis or far breton. It also goes stovetop-to-oven-to-table.
A cake tin gives you: easy release and serving (especially a springform or loose-bottom tin), no acid worry (coated aluminum, glass, or ceramic doesn’t react with cherries the way bare cast iron does), and lighter handling. The cost is weaker edges — a thin tin heats slower and holds less heat, so the result is paler and more uniformly soft, more “baked custard” than “crisp-edged.”
Which recipe cares: the clafoutis and sour cream clafoutis lean on those crisp edges, so they lose the most in a tin (still good, just softer). The far breton cares least — it’s dense and sliceable by design, so a clean springform release is arguably a win.
If you use a tin: butter it well (or line the base with parchment for a non-reactive tin), preheat a baking sheet and set the tin on it for a better bottom, and add a few minutes since it heats slower than preheated cast iron. A ~9-inch round is close to the Field No. 8’s capacity.
Recipes sized for the Field No. 8
The 10¼-inch Field holds roughly 600–660g of batter at a good clafoutis depth. A few recipes here are written or scaled to that:
- Cherry Clafoutis — sized directly for the Field No. 8 (~656g batter). The reference bake.
- Sour Cream Cherry Clafoutis — the base is for a small dish; the notes include a 2× version that fills the Field No. 8.
- Cherry Far Breton — the dense, sliceable cousin; bakes happily in the skillet too (use enameled or stoneware if your seasoning is young, since it’s also cherry-and-rum acidic).
As a rule of thumb, any custard-batter or skillet dessert written for a “9–10 inch dish” or “9-inch skillet” will scale to the Field No. 8 at roughly 1.2–1.3× — or just fill it to the same depth and adjust the bake time up a few minutes for the extra batter.
